    Production zone: Piedmont Region, Province of Asti

    Climate: Mediterranean, characterized by harsh winters with temperatures reaching -15°C, and hot and humid summers with temperatures reaching 35° C

    Soil: limy, clayey, sandy and calcareous

    Altitude: 180-300 meters above sea level

    Training system: traditional Piedmontese guyot with a vine density ranging from 4,000 to 4,500 vine stocks per hectare

    Grape variety: 100% Dolcetto

    Production yield per hectare: 90 quintals

    Average age of the vines: 10-25 years

    Vinification: after an advanced grape harvest, maceration is carried out for 6 to 7 days at a controlled temperature of 25°C

    Colour: ruby red with violet nuances

    Aroma: intense and fruity

    Taste: fresh and fragrant with a lively and fulfilling taste. Soft, harmonic and velvety with a slightly bitter aftertaste, dominated by fruity notes such as cherry and plums

    Alcohol: 12.5%

    Total acidity: < 5.5 gr./l

    Sugar residue: 4 gr./l

    Dry extract: 26 gr./l

    Food matching: simple dishes, salamis and cheese. Perfect to accompany the entire meal also with Pizza!
