    Climate: mediterranean, characterized by harsh winters with temperatures reaching -15°C, and hot and humid summers with temperatures reaching 35°C

    Soil: sandy, clayey and calcareous

    Altitude: 180 – 300 meters above sea level

    Training system: traditional Piedmontese guyot with an average vine density of 5000 vine stocks per hectare

    Grape variety: 100% Cortese

    Production yield per hectare: 95 quintals

    Average age of the vines: 20 – 30  years

    Vinification: natural second fermentation in stainless steel tank, charmat method

    Colour: pale straw yellow

    Aroma: characteristic, delicate, faint but persistent

    Taste: pleasantly dry with a slightly bitter aftertaste and well balanced on the palate

    Alcohol: 12%

    Total acidity: < 6 gr./l

    Sugar residue: < 5 gr./l

    Dry extract: 25 gr./l

    Food matching: Ideal as aperitif, it pairs well with light dishes, vegetable, risotto, white meat and delicate fish dishes

    Serving temperature: Serve at 8 – 10° C
